Roasted Eggplant: farm style (serves 4)
1-2 tbsp olive oil
2 medium to large Eggplant
1 tbsp minced Garlic
1 large or 2 medium tomatoes
2-3 tbsp soy sauce or liquid aminos
Preheat oven to 375 degrees F. Thinly slice eggplant, mince garlic and chop tomatoes. Arrange eggplant flat on a baking dish, throw tomatoes on top, sprinkle garlic all over, and add olive oil and soy sauce. Bake for 25 minutes. Check if eggplant looks dry flip or stir up a bit. Bake another 20 minutes. Remove from oven and serve!
